WHere is a home-style take on a beverage from a new cocktail list. It's a batch premix that is bursting full of flavours associated with Christmas time, rendering it ideal for a festive gathering. Save the extra citrus syrup to use in morning drinks, sweets, or for another batch of this cocktail.
Bikini Recipe
Makes enough for 10 people
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Put every components in a saucepan, bring to a simmer, stirring until the sugar dissolves. Then, take off the stove and leave to cool down completely. Decant into an clean bottle, seal and store chilled, where it will keep for around a month.
Preparing the Cocktail Base: Pour the specified spirits and syrup in a sizeable container, let it rest for 60 minutes, then strain preferably using muslin, making it completely strained.
When ready to serve: Add 85ml of your cocktail base into a mixing glass packed with ice, and stir gently for about 60 seconds until cold. Filter into a chilled martini glass or similar, garnish with a few cranberries and finish with a quick spritz of the essential oil over the drink.
